  • Jean-Pierre GILLOT, vice-president of the Climats du vignoble de Bourgogne association, will give a talk on the climats of the Burgundy vineyards. The Climats de Bourgogne were listed as a UNESCO World Heritage Site in 2015. This presentation will be followed by a talk on Burgundy's vineyards by a member of the Confrérie des Tastevins and a presentation by the President of the Couchois winegrowers. Afterwards, a vin d'honneur will be served to the participants.

    What are the climats of Burgundy?
    The word "Climat" should not be misleading. It does not refer to meteorology, but to a specifically Burgundian term for the wine-growing terroir.
    Climat, a very precise definition. In Burgundy, a Climat refers to a parcel of vines, progressively and precisely delimited by man and recognised by its name for centuries, often since the Middle Ages. Each Climat has specific geological, hydrometric and exposure characteristics. Each Climat is vinified separately, from a single grape variety, and the resulting wine takes the name of the Climat from which it is made. The personality of the Climat is expressed in the wine, vintage after vintage, thanks to the know-how of the winemaker. Nowhere else in the world has man sought to link wine production to its place of production in such a precise and intimate way.

    Together, the Climats de Bourgogne constitute the very essence of the Burgundy winegrowing model.
